Spinach Quesadilla? Yes Sir!

I have been on a spinach KICK. It's a really good kick to be on. I highly recommend it.

It started when I bought the TUB of spinach at Costco. You know the one. And all this dark green leafy goodness kept creeping into my thoughts - and into my recipes. Did you know that fresh spinach is SO GOOD?

Popeye can keep his canned stuff - yeech! But the thick, buttery, sweet and sassy fresh stuff is a wonder food. By itself, some might say that it could be described as ho-hum. But in stuff?

It's like salt, people. Flavors jump up and start doing the calypso in your mouth.

I know this is not a cooking blog, but I shall still defiantly share with you our new staple (homemade bbq chicken pizzas, MOVE OVER!).

SPINACH AND CHICKEN QUESADILLAS!

Here's what you need:

  • tortillas (uncooked)
  • chicken - cubed and cooked (and seasoned with a bit of taco or fajita seasoning if you like, toss in a bit of salsa if you're adventurous) (or use a can of Costco's chicken. Amazingly delicious!)
  • black beans (canned so they're already cooked)
  • tomatoes (we prefer Roma for the firmer texture and fresher flavor)
  • grated cheese (try Tillamook Sharp Cheddar)
  • SPINACH!

Here's what you do:

  1. cook your tortillas. The uncooked ones are SO MUCH BETTER and act more authentic (slightly stretchy rather than slightly dried out and flaky). We like these from Costco:

  1. In a separate pan, cook your chicken.
  1. Put a (cooked) tortilla down on your still medium-hot (from tortillas) frying pan. Or skillet if you're not me and have a skillet. Put a thin layer of cheese down (we'll add more later). Spread your chicken, your black beans, your tomatoes, and your SPINACH - just toss a handful of those beauties on there! Then add another thin layer of cheese. This is the glue, as Bill says, so that everything fuses to itself and the top tortilla. Put the top tortilla on.
  1. Wait a bit (don't you love how exact my recipes are?). Flip it over. Wait a bit more. Toss onto a plate, cut with a pizza cutter, top with Sour Cream and Salsa, and LOOK AT THIS BEAUTY:

  1. Bill sometimes does this with his, instead:

  1. Treat yourself to a cold glass of agua, and enjoy while playing "the train game"* with your best friend.

(if you put ketchup on your taco, you may or may not be mocked)

(yes, I realize all the steps are numbered 1.
I don't know how to fix it.
so I didn't.
Plus, they're ALL very important steps, so...)


*The Train Game is more properly known as: Ticket to Ride.

Lovvvve! fresh spinach! The quesadilla looks great. I cover uncooked chicken breasts with a thick layer of spinach and fresh mushrooms cover the whole thing with Draft sun dried tomato salad dressing and bake at 350 for an hour or so, Delish.

We agree that if you put ketchup on your taco, you should at least anticipate a potential mocking.
