Spinach Arugula Hummus

If you don't like hummus, well...you're a wee bit odd, 'cause that's a little like saying "I don't like sauce." There are so many varieties of flavors! And so many food thingies you can use to get the delicious stuff from plate to mouth! 

But, I'll allow it. Because maybe you don't like garbanzos

But if you *DO* like hummus, oh my mercy, friend! You must try this new recipe I've fallen head over spring greens for!

Spinach Arugula Hummus

Brought to you from the kitchen of Shawn Mikkelson - our family's resident hummus and panini expert. 


Smooth, yet zippy. A little bit tangy, a little bit savory. May be confused by your dinner guests for guacamole. 

No avocado here, folks!

You will need: 


2 cups Spinach
1 cup arugula
1/4 cup cilantro
1/4 cup green onion (diced)
2 garlic cloves
1/4 cup lemon juice
1 cup olive oil
Pinch of sea salt 
Ground pepper

Toss it all into your trusty blender...


...and blend until smooth. 

Gradually add 4 cups of garbanzo beans and blend until creamy. 

Serve with pita chips, rice crackers, veggies or a French baguette toasted with olive oil. 

Or, my recent favorite, pretzel chips! So weird, so awesome!
